Happy Monday, everyone! I had a fairly uneventful weekend made up almost entirely of seeing friends and wandering aimlessly around Brooklyn. Just the way I like it. I snapped a few photos along the way…

Remember when Mr. Big surprised bummed-out birthday girl Carrie with a bouquet of red balloons? Well this reminded me of that, and therefore a photo was in order.

I’m no genius in the kitchen, but I’m pretty proud of these muffin tin frittatas. Beat 6 or so eggs and pour them into a greased muffin tin. Add chopped veggies of your choice – I used spinach and grape tomatoes. Bake for about 20 minutes at 350 and you’ll have a healthy on-the-go breakfast for the week.
